Perfect breakfast or a very healthy dessert that is made using all plant-based and gluten-free ingredients. This Peach Ginger Chia Pudding recipe can be made in simple steps that require no cooking!
Ingredients to make Peach Ginger Chia Pudding
- Peaches.
- Soy Milk.
- Ground Ginger.
- Coconut Sugar.
- Vanilla Extract.
- Chia Seeds.
Soy Milk: Use any plant-based milk of your choice in place of soy milk, soy milk has a much creamier consistency compared to other plant milk and has no particular taste. So, if possible, use soy milk in this recipe.
Coconut Sugar: I personally feel coconut sugar gives a rich flavor compared to any other sweeteners and the combination of peach with coconut sugar in this recipe is too good. Add more coconut sugar or another sweetener of your choice if needed.
How to make Peach Ginger Chia Pudding
- Deseed Peaches and chop into cubes.
- Add chopped peaches, soy milk, ground ginger, coconut sugar, vanilla extract to a blender and blend smoothly. Keep peach milk aside.
- In a bowl add chia seeds, prepared peach milk and, mix till no dry chia seeds are found. Cover the bowl with a lid and keep it in the refrigerator for minimum of 1 hour.
- Serve with fresh fruits or granola! Add 2-3 tbsp of more soy milk if the consistency of chia pudding is too thick.
